Founding Story

After spending 15 years in hospitality, Jonah Chusid, founder of Chu’s Meat Market, saw a clear gap in the kosher market: great product existed, but the experience around it was often an afterthought. Drawing on everything learned managing a 350,000-square-foot hospitality complex - from service standards and operational discipline to guest experience and trust — Jonah intentionally distilled that philosophy into a 1,500-square-foot luxury meat market. Chu’s was built to bring hospitality-level care, consistency, and attention to detail into kosher retail, proving that a small space can deliver an exceptional experience when it’s run with purpose.

  • STAR-K Glatt Kosher, Sealed at the Source

    Chu's does not break seals or reprocess meat on site. Every cut arrives factory-sealed with tamper-evident identification from STAR-K supervised facilities, principally Letovim Meats and Landsman Meat Company, and the certification travels with the product from the plant. Each item's hashgacha is listed on its own product page, so journalists and readers can verify the chain themselves.

  • Kosher Fullblood American Wagyu Program

    Marbling the kosher market historically could not access. Chu's stocks Fullblood American Wagyu raised on independent Texas ranches, alongside F1 crossbred and Kosher American Wagyu lines spanning steaks, whole briskets, ribs, roasts and burger patties. Jonah and Sharone fly out to meet Wagyu suppliers in person, taste every program, and only bring in what clears their own standard.

  • Hand-Selected, Priced by Exact Weight

    No rounded averages and no mystery portions. Every cut is hand-selected at the counter and priced to the exact weight of the piece that ships, which matters in a category where Wagyu portion sizes vary month to month with natural animal size. Customers pay for the steak they actually receive.

  • Flash-Frozen at Peak, Shipped Nationwide

    Rather than sitting in a display case losing quality, cuts are frozen at peak freshness to hold flavor and texture. Orders ship in one to two days packed to arrive still frozen, with free shipping over $750, which puts steakhouse-grade kosher beef within reach of communities that have no premium kosher butcher nearby.

  • Husband-and-Wife Owned, Hospitality-Built

    Founded in 2021 by Jonah and Sharone Chusid. Jonah spent 15 years in hospitality, including managing a 350,000-square-foot hospitality complex, then deliberately applied that service discipline to a 1,500-square-foot butcher shop.     Chu's works with a small family-run Midwest farm to produce its own mustards, sauces, marinades and salsas with no preservatives, corn syrup or additives. The line is OU-certified, gluten-free and vegan, and sits alongside 30-plus imported kosher olive oils and hand-forged Japanese knives, making Chu's a full kosher grilling and gifting destination rather than a meat counter alone.

  • Chu's ships its full Glatt Kosher catalog anywhere in the United States. Cuts are frozen at peak freshness and packed to arrive still frozen in one to two days, so households far from a premium kosher butcher can order Fullblood Wagyu, whole briskets, pasture-raised poultry, Colorado lamb and fish direct. Useful for stories on kosher food access outside major metro communities.

  • The Lawrence storefront on Central Ave is a staffed counter, not a self-serve case. Customers are walked through grade, marbling, cut selection and cooking method before they buy, and portions are cut and priced to order. Hours run Sunday to Wednesday 10-6, Thursday 9-7, Friday 9-3, closed Shabbos. Serves the Five Towns and Barrier Island.

  • Chu's builds custom kosher gift boxes to a stated budget for Chanukah, Purim, Rosh Hashanah, end-of-year corporate gifting and hostess gifts. Options range from gift cards starting at $25 to curated Wagyu boxes, small-batch sauces, imported olive oils and engraved boards.   • We're Jonah & Sharone Chusid — a husband-and-wife team who built Chu's around one simple idea: give the kosher community access to the kind of premium meat usually reserved for high-end steakhouses.

    What started as a family dream is now a real butcher shop on Central Ave, run the way family businesses should be — by hand, with people we know by name. We fly in to meet our Wagyu suppliers face to face, taste everything ourselves, and only put a cut in our case if we'd serve it at our own Shabbos table.
