Meat N’ Bone is a modern butcher shop built around exceptional sourcing, education, transparency and access. The company works with trusted farms, ranches, fisheries and producers around the world to bring customers proteins and cuts that were once primarily available through high-end restaurants and specialty foodservice.
Its assortment extends far beyond traditional steakhouse cuts, spanning USDA Prime beef, American Wagyu, Japanese A5 Wagyu, dry-aged beef, Iberico and heritage pork, lamb, poultry, premium seafood, game and exotic meats, burgers, sausages, charcuterie, prepared foods, sauces, seasonings and specialty products.
At the center of Meat N’ Bone is a disciplined approach to sourcing. The team selects products with an emphasis on quality, provenance, traceability and consistency, while also helping customers understand what makes each product different.
Education is a core part of the brand. Meat N’ Bone aims to make the world of premium proteins easier to understand, helping customers learn about proteins, grading systems, origins, production methods, cuts, preparation techniques and cooking methods. Whether explaining the difference between Japanese A5 and American Wagyu, how dry aging changes a steak, or how to prepare an unfamiliar cut, the goal is to give customers the knowledge and confidence to make better purchasing and cooking decisions.
Through its e-commerce platform and retail boutiques, Meat N’ Bone is reimagining the traditional butcher shop for the modern consumer—combining expert sourcing, product knowledge and education with the convenience and accessibility customers expect today.
Founding Story
Meat N’ Bone was founded around a simple idea: people should have access not only to exceptional proteins, but also to the knowledge needed to understand and enjoy them.
Founders Luis Mata and Gabriel Llaurado saw a disconnect in the market. Some of the world’s best beef, Wagyu, heritage pork, specialty seafood and other premium proteins were available to top restaurants and foodservice professionals, but for everyday consumers they could be difficult to find, difficult to understand, and often intimidating to purchase.
The opportunity was not simply to sell better meat. It was to make premium proteins more accessible through sourcing, transparency and education.
Meat N’ Bone launched online in 2018, creating a platform where customers could discover exceptional products while also learning what made them special—where they came from, how they were graded, how different breeds and production methods affected flavor and texture, and how to cook them properly.
As the company grew, education remained central to the brand. Meat N’ Bone expanded its content, product guides and in-store expertise alongside its assortment, helping customers navigate everything from Japanese Wagyu grading and dry aging to unfamiliar cuts, game meats, seafood and different cooking techniques.
What began as an effort to make restaurant-quality proteins easier to access has evolved into a broader mission: to modernize the butcher shop by combining exceptional sourcing, education, transparency and convenience.

Gabriel Llaurado is Co-Founder and Chief Marketing Officer of Meat N’ Bone, where he leads the company’s brand, marketing, technology and customer experience strategy.
With a background spanning computer science, marketing, media and technology, Gabriel has built his career at the intersection of consumer behavior, digital innovation and brand development. Prior to Meat N’ Bone, his experience included work with CNN and projects involving global brands such as Delta Air Lines, Pernod Ricard, TAG Heuer (LVMH), and others.
In 2018, Gabriel co-founded Meat N’ Bone with the goal of creating a more modern way for consumers to discover, understand and purchase exceptional proteins. He has played a central role in developing the company from an e-commerce startup into an omnichannel food and hospitality brand encompassing butcher shops, restaurants, prepared foods and nationwide e-commerce.
Gabriel is particularly focused on education and transparency as tools for building trust with consumers. Through Meat N’ Bone’s content, product storytelling and digital platforms, he has helped make topics such as sourcing, grading, breeds, aging techniques and preparation more approachable to everyday customers.
His work centers on building Meat N’ Bone into a long-term consumer brand at the intersection of exceptional sourcing, education, technology and modern retail.

Luis Mata is Co-Founder and Chief Executive Officer of Meat N’ Bone, where he leads the company’s strategy, finance, operations, sourcing and continued expansion.
Before founding Meat N’ Bone, Luis built a career across finance, financial planning and analysis, strategy and business development, working in industries ranging from logistics and education to luxury goods. His experience includes roles with UPS and Ryder, leading FP&A, strategy and business development at Bell & Ross, holding finance and strategy leadership positions at Laureate Education, and later serving as North America CFO of SAE Institute.
That experience gave Luis a strong foundation in financial discipline, operations, forecasting, strategic planning and business development—skills that would later become instrumental in building and scaling Meat N’ Bone.
But the idea behind Meat N’ Bone came from something more personal. A passion for food, combined with time spent visiting farms and learning directly from producers, exposed Luis to the disconnect between the quality of proteins available at the source and what most consumers could easily find, understand and purchase at home.
In 2018, Luis co-founded Meat N’ Bone around the belief that consumers should have better access not only to exceptional proteins, but also to better information about where those products come from and what makes them different.
He has since helped develop Meat N’ Bone’s sourcing philosophy, building relationships with selected farms, ranches, fisheries and producers while emphasizing quality, provenance, traceability and consistency. Under his leadership, Meat N’ Bone has evolved from a small e-commerce operation into an omnichannel platform spanning nationwide e-commerce, butcher shops, restaurants and prepared foods.
Luis remains particularly focused on sourcing, operational excellence and consumer education, including helping customers better understand agriculture, production, pricing and the supply chains behind the proteins they purchase.
