Founding Story
After years of enjoying fresh corn tortilla chips shipped by my mother-in-law from my wife’s home town in Cuernavaca, Mexico, I opened up a tortilla chip factory to share real tortilla chips with the rest of New England, and now with the US.
We produce our tortillas the same way the Aztecs did using a 3,500-year-old process called nixtamalization. First, we soak our corn in water and lime, from limestone. Then we grind the corn mixture using hand-carved volcanic stones.
Our recipe has just three ingredients: 100% US Organic white corn, filtered water, and mineral lime from limestone. The result is a tortilla chip that is flavorful, and substantial.
You can find Mi Niña tortilla chips at grocery, club, and convenience stores, including local supermarkets and independent retailers across the U.S.
We pride ourselves on staying true to tradition and I am grateful to be able to share my tortilla products with my family and yours.
Tortilleria Mi Niña®’s name and logo are inspired by a photo Chef Jamie took of his then 3-year-old daughter making tortillas with her abuela in Cuernavaca, Mexico. Chef Jamie’s mother painted a picture of her granddaughter from this photo. That painting inspired today’s logo.

When Chef Jaime Mammamo’s wife — who is Mexican — couldn’t find tortillas in the U.S. that tasted like the ones she grew up with, the couple decided to start making their own. They focused on traditional preparation methods, 100% organic white corn, filtered water and lime and the flavors and textures missing from most mainstream options. What began in their kitchen quickly gained traction, and Mi Niña® grew organically through word of mouth before expanding nationally.
Chef Jamie Mammano is a renowned Boston-based chef and restaurateur, founder of Columbus Hospitality Group, and acclaimed for his influential restaurants including Mistral, Sorellina, Ostra, and Mooo.
